A rich and creamy one-pot chicken recipe with fresh spinach, sun-dried tomatoes, and a garlic-Parmesan sauce. Perfect for quick dinners.

Ingredients

  • 4 boneless, skinless chicken thighs

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 cup chicken broth

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • ½ cup sun-dried tomatoes, chopped

  • 4 cups fresh spinach

  • 1 tsp dried Italian seasoning

  • Salt and pepper, to taste

  • 1 tbsp butter

  • Optional garnish: Fresh basil or parsley

Directions

  • Season chicken thighs with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet or pot over medium heat. Sear chicken thighs for 4-5 minutes per side. Remove and set aside.
  • Melt butter in the same pot and sauté minced garlic until fragrant.
  • Add chicken broth, heavy cream, Parmesan cheese, and sun-dried tomatoes. Stir well and bring to a simmer.
  • Add fresh spinach and stir until wilted.
  • Return the chicken to the pot, cover, and simmer for 8-10 minutes until fully cooked.
  • Garnish with basil or parsley and serve hot with your choice of side.

Notes

  • Serve with pasta, mashed potatoes, or crusty bread for a complete meal.
