Ingredients
4 boneless, skinless chicken thighs
2 tbsp olive oil
3 garlic cloves, minced
1 cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup sun-dried tomatoes, chopped
4 cups fresh spinach
1 tsp dried Italian seasoning
Salt and pepper, to taste
1 tbsp butter
Optional garnish: Fresh basil or parsley
Directions
- Season chicken thighs with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet or pot over medium heat. Sear chicken thighs for 4-5 minutes per side. Remove and set aside.
- Melt butter in the same pot and sauté minced garlic until fragrant.
- Add chicken broth, heavy cream, Parmesan cheese, and sun-dried tomatoes. Stir well and bring to a simmer.
- Add fresh spinach and stir until wilted.
- Return the chicken to the pot, cover, and simmer for 8-10 minutes until fully cooked.
- Garnish with basil or parsley and serve hot with your choice of side.
