Discover the Nordic Power Plate, a protein-packed bowl with salmon, rye berries, and fresh Scandinavian flavors, perfect for muscle building.

Ingredients

  • 200g fresh salmon fillet

  • 1 cup cooked rye berries

  • 1 cup baby spinach leaves

  • ½ cup pickled beets, sliced

  • ¼ cup cucumber, thinly sliced

  • 2 tbsp chopped fresh dill

  • 1 tbsp toasted sunflower seeds

  • 2 tbsp Dijon mustard

  • 1 tbsp olive oil

  • 1 tsp apple cider vinegar

  • 1 tsp honey

  • 1 tbsp fresh lemon juice

  • ½ tsp sea salt

  • Freshly cracked black pepper

Directions

  • Preheat the oven to 375°F (190°C).
  • Place the salmon on a baking sheet lined with parchment paper. Season with salt, pepper, and a sprinkle of dill.
  • Bake for 12–15 minutes or until the salmon flakes easily with a fork.
  • If not pre-cooked, boil ½ cup of rye berries in salted water for 40–50 minutes or until tender. Drain and cool slightly.
  • In a large bowl or plate, create a base with baby spinach and cooked rye berries.
  • Add the pickled beets, cucumber slices, and sunflower seeds.
  • Flake the cooked salmon into bite-sized pieces and place them on top of the bowl.
  • In a small bowl, whisk together Dijon mustard, olive oil, apple cider vinegar, honey, lemon juice, salt, and pepper until emulsified.
  • Pour the mustard-dill dressing generously over the bowl. Sprinkle with additional dill for garnish.

Notes

  • Serve with rye crispbread or lemon sparkling water for an authentic Nordic touch.
