A delicious, muscle-building recipe featuring tender chicken, crispy breading, and melty mozzarella in a healthy Italian-inspired dish.

Ingredients

  • 2 large chicken breasts (about 8 oz each)

  • 1 cup panko breadcrumbs

  • ½ cup grated Parmesan cheese

  • 1 large egg

  • 1 cup marinara sauce

  • 1 cup shredded part-skim mozzarella cheese

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • 1 tbsp olive oil spray

Directions

  • Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil spray.
  • In a shallow bowl, mix the panko breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  • Beat the egg in another shallow bowl. Dip each chicken breast into the egg, then coat it thoroughly in the breadcrumb mixture.
  • Place the coated chicken breasts in the prepared baking dish. Lightly spray the tops with olive oil spray.
  • Bake for 20 minutes.
  • Remove the chicken from the oven. Spoon marinara sauce over each piece, then sprinkle shredded mozzarella cheese on top.
  • Return the dish to the oven and bake for another 10 minutes or until the cheese is melted and bubbly and the chicken is fully cooked.
  • Let the chicken rest for 5 minutes before serving.

Notes

  • Serve with whole-grain spaghetti, roasted vegetables, or a green salad for a balanced meal.
