Ingredients
2 tablespoons green curry paste
1 can (13.5 oz) coconut milk
1 cup firm tofu, cubed
1 cup broccoli florets
1/2 cup snow peas
1/2 cup red bell pepper, sliced
2 kaffir lime leaves
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon vegetable oil
1 cup cooked jasmine rice
Fresh Thai basil leaves

Directions
- Press the tofu to remove excess water and cut it into cubes. Prepare vegetables by slicing them into bite-sized pieces.
- Heat vegetable oil in a skillet over medium heat. Sauté the green curry paste for 1-2 minutes until fragrant.
- Add the coconut milk and stir to combine. Bring to a gentle simmer.
- Add the tofu cubes and simmer for 5 minutes.
- Toss in broccoli, snow peas, and red bell pepper. Stir and cook for 5-7 minutes until vegetables are tender but crisp.
- Season with soy sauce, brown sugar, and kaffir lime leaves. Adjust seasoning as needed.
- Garnish with fresh Thai basil leaves and serve hot over jasmine rice with lime wedges.
