Ingredients
1 cup quinoa, rinsed
2 cups water
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup Kalamata olives, sliced
½ cup feta cheese, crumbled
¼ cup red onion, finely diced
¼ cup fresh parsley, chopped
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
1 garlic clove, minced
½ tsp dried oregano
Salt and black pepper to taste
Directions
- Cook the quinoa: In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat, cover, and simmer for 12-15 minutes until the water is absorbed. Fluff with a fork and let it cool.
- Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and black pepper.
- Chop and mix: In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, olives, red onion, and parsley.
- Add the dressing: Pour the dressing over the salad and toss everything together until well combined.
- Finish with feta: Gently fold in the crumbled feta cheese.
- Serve or store: Enjoy immediately or refrigerate for at least 30 minutes for enhanced flavors.
