Ingredients
1 can (15 oz) black beans, drained and rinsed
2 large eggs
⅓ cup cocoa powder
½ cup maple syrup or honey
¼ cup melted coconut oil
1 teaspoon vanilla extract
½ teaspoon baking powder
¼ teaspoon salt
½ cup dark chocolate chips (plus extra for topping)
Directions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a food processor, blend black beans, eggs, cocoa powder, maple syrup, coconut oil, vanilla, baking powder, and salt until smooth.
- Stir in the dark chocolate chips.
- Pour batter into the baking dish, smoothing the top. Sprinkle extra chocolate chips on top.
- Bake for 20-25 minutes until set and a toothpick comes out mostly clean.
- Let cool before slicing and serving.
