Ingredients
2 tbsp olive oil
1 lb (450g) boneless, skinless chicken breast, diced
1 onion, finely chopped
3 cloves garlic, minced
2 cups mixed vegetables (e.g., broccoli florets, sliced carrots, bell peppers)
2 cups uncooked penne pasta
4 cups chicken broth
1 cup milk (or substitute with unsweetened almond milk for a lighter option)
½ cup grated Parmesan cheese (adds a rich, savory flavor)
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions
- Sauté the Chicken:
Heat olive oil in a large skillet or pot over medium heat. Add diced chicken and cook until golden brown on all sides, about 5-7 minutes. Remove the chicken and set aside. - Cook Aromatics:
In the same pot, add onion and garlic. Sauté for 2-3 minutes until the onion is translucent. - Add Vegetables and Pasta:
Stir in the mixed vegetables, uncooked pasta, and chicken broth. Bring to a boil. - Simmer:
Reduce heat to low, cover, and let simmer for 10-12 minutes, stirring occasionally, until the pasta is al dente. - Add Creaminess:
Pour in the milk and return the cooked chicken to the pot. Stir in the Parmesan cheese and Italian seasoning. Simmer for another 2-3 minutes until the sauce thickens. - Season and Serve:
Season with salt and pepper to taste. Garnish with fresh parsley and serve hot.
Notes
- This recipe pairs well with a side of garlic bread or a crisp green salad. For added flavor, sprinkle extra Parmesan on top just before serving.
