A flavorful, plant-based Thai green curry with tofu, coconut milk, and fresh vegetables, ready in just 30 minutes.

Ingredients

  • 2 tablespoons green curry paste

  • 1 can (13.5 oz) coconut milk

  • 1 cup firm tofu, cubed

  • 1 cup broccoli florets

  • 1/2 cup snow peas

  • 1/2 cup red bell pepper, sliced

  • 2 kaffir lime leaves

  • 1 tablespoon soy sauce

  • 1 tablespoon brown sugar

  • 1 teaspoon vegetable oil

  • 1 cup cooked jasmine rice

  • Fresh Thai basil leaves

  • Lime wedges

Directions

  • Press the tofu to remove excess water and cut it into cubes. Prepare vegetables by slicing them into bite-sized pieces.
  • Heat vegetable oil in a skillet over medium heat. Sauté the green curry paste for 1-2 minutes until fragrant.
  • Add the coconut milk and stir to combine. Bring to a gentle simmer.
  • Add the tofu cubes and simmer for 5 minutes.
  • Toss in broccoli, snow peas, and red bell pepper. Stir and cook for 5-7 minutes until vegetables are tender but crisp.
  • Season with soy sauce, brown sugar, and kaffir lime leaves. Adjust seasoning as needed.
  • Garnish with fresh Thai basil leaves and serve hot over jasmine rice with lime wedges.

Notes

  • Serve with jasmine rice or flatbread. Pair with a fresh Thai cucumber salad for a refreshing complement.
