Ingredients

  • 1 cup quinoa, rinsed

  • 2 cups water

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • ½ cup Kalamata olives, sliced

  • ½ cup feta cheese, crumbled

  • ¼ cup red onion, finely diced

  • ¼ cup fresh parsley, chopped

  • 3 tbsp extra virgin olive oil

  • 2 tbsp fresh lemon juice

  • 1 garlic clove, minced

  • ½ tsp dried oregano

  • Salt and black pepper to taste

Directions

  • Cook the quinoa: In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat, cover, and simmer for 12-15 minutes until the water is absorbed. Fluff with a fork and let it cool.
  • Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and black pepper.
  • Chop and mix: In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, olives, red onion, and parsley.
  • Add the dressing: Pour the dressing over the salad and toss everything together until well combined.
  • Finish with feta: Gently fold in the crumbled feta cheese.
  • Serve or store: Enjoy immediately or refrigerate for at least 30 minutes for enhanced flavors.

Notes

  • Pairs well with grilled chicken, fish, or warm pita bread. Serve chilled or at room temperature for the best flavor.
