A quick and hearty Paleo Sweet Potato Breakfast Hash packed with sausage, veggies, and eggs. Perfect for a healthy, delicious start to your day!

Ingredients

  • 2 medium sweet potatoes, peeled and diced

  • 2 tablespoons coconut oil

  • 1 small onion, diced

  • 1 red bell pepper, diced

  • 2 cups fresh spinach

  • 1 teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon sea salt

  • 4 links of paleo-friendly sausage, sliced

  • 4 large eggs

  • Fresh parsley or cilantro, optional garnish

Directions

  • Dice the sweet potatoes and vegetables into small pieces.
  • Heat 1 tablespoon of coconut oil in a skillet and cook sweet potatoes for 8–10 minutes. Set aside.
  • Add the remaining oil and sauté onion and bell pepper for 3–4 minutes.
  • Push vegetables aside and cook sausage slices until browned, about 4–5 minutes.
  • Return sweet potatoes to the skillet, add spinach, and season with paprika and garlic powder. Cook for 2–3 minutes.
  • Make 4 wells in the hash and crack an egg into each. Cover and cook for 3–5 minutes.
  • Garnish with parsley or cilantro and serve hot.

Notes

  • Pair with fresh fruit or hot sauce for added flavor.
