Ingredients
2 medium sweet potatoes, peeled and diced
2 tablespoons coconut oil
1 small onion, diced
1 red bell pepper, diced
2 cups fresh spinach
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon sea salt
4 links of paleo-friendly sausage, sliced
4 large eggs
Fresh parsley or cilantro, optional garnish
Directions
- Dice the sweet potatoes and vegetables into small pieces.
- Heat 1 tablespoon of coconut oil in a skillet and cook sweet potatoes for 8–10 minutes. Set aside.
- Add the remaining oil and sauté onion and bell pepper for 3–4 minutes.
- Push vegetables aside and cook sausage slices until browned, about 4–5 minutes.
- Return sweet potatoes to the skillet, add spinach, and season with paprika and garlic powder. Cook for 2–3 minutes.
- Make 4 wells in the hash and crack an egg into each. Cover and cook for 3–5 minutes.
- Garnish with parsley or cilantro and serve hot.
Notes
- Pair with fresh fruit or hot sauce for added flavor.
