These high-protein black bean brownies are a healthy, fudgy, and gluten-free treat packed with protein and fiber.

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed

  • 2 large eggs

  • ⅓ cup cocoa powder

  • ½ cup maple syrup or honey

  • ¼ cup melted coconut oil

  • 1 teaspoon vanilla extract

  • ½ teaspoon baking powder

  • ¼ teaspoon salt

  • ½ cup dark chocolate chips (plus extra for topping)

Directions

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  • In a food processor, blend black beans, eggs, cocoa powder, maple syrup, coconut oil, vanilla, baking powder, and salt until smooth.
  • Stir in the dark chocolate chips.
  • Pour batter into the baking dish, smoothing the top. Sprinkle extra chocolate chips on top.
  • Bake for 20-25 minutes until set and a toothpick comes out mostly clean.
  • Let cool before slicing and serving.

Notes

  • Pair with Greek yogurt for extra protein or serve with coffee.
