Ingredients
1 lb (450g) lean ground beef (85% lean/15% fat)
(Rich in protein and healthy fats to fuel muscle growth.)2 medium sweet potatoes, diced (~2 cups)
(A great source of complex carbs and fiber, providing sustained energy.)1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp black pepper
1/4 tsp sea salt (adjust to taste)
2 cups baby spinach, roughly chopped
1/4 cup low-sodium beef broth
1 tbsp fresh parsley, chopped (optional, for garnish)
Directions
- Heat the Skillet:
Heat 1 tbsp olive oil in a large skillet over medium heat. - Cook the Beef:
Add the ground beef and cook until browned, about 5-7 minutes. Break it apart with a wooden spoon as it cooks. Once fully browned, drain any excess fat if necessary and set aside. - Sauté Vegetables:
In the same skillet, add chopped onion and garlic. Sauté for 3-4 minutes until the onions are translucent and fragrant. - Cook the Sweet Potatoes:
Add the diced sweet potatoes, smoked paprika, cumin, black pepper, and sea salt. Stir well to coat the potatoes in the spices. Pour in the beef broth and cover the skillet with a lid. Cook for 10-12 minutes, stirring occasionally, until the sweet potatoes are tender. - Combine Beef and Spinach:
Return the cooked ground beef to the skillet. Stir in the chopped spinach and cook for another 2-3 minutes until the spinach wilts. - Final Touch:
Remove from heat and garnish with fresh parsley if desired.
