Ingredients
200g fresh salmon fillet
1 cup cooked rye berries
1 cup baby spinach leaves
½ cup pickled beets, sliced
¼ cup cucumber, thinly sliced
2 tbsp chopped fresh dill
1 tbsp toasted sunflower seeds
2 tbsp Dijon mustard
1 tbsp olive oil
1 tsp apple cider vinegar
1 tsp honey
1 tbsp fresh lemon juice
½ tsp sea salt
Freshly cracked black pepper
Directions
- Preheat the oven to 375°F (190°C).
- Place the salmon on a baking sheet lined with parchment paper. Season with salt, pepper, and a sprinkle of dill.
- Bake for 12–15 minutes or until the salmon flakes easily with a fork.
- If not pre-cooked, boil ½ cup of rye berries in salted water for 40–50 minutes or until tender. Drain and cool slightly.
- In a large bowl or plate, create a base with baby spinach and cooked rye berries.
- Add the pickled beets, cucumber slices, and sunflower seeds.
- Flake the cooked salmon into bite-sized pieces and place them on top of the bowl.
- In a small bowl, whisk together Dijon mustard, olive oil, apple cider vinegar, honey, lemon juice, salt, and pepper until emulsified.
- Pour the mustard-dill dressing generously over the bowl. Sprinkle with additional dill for garnish.
Notes
- Serve with rye crispbread or lemon sparkling water for an authentic Nordic touch.
