Ingredients
2 large eggs
1 turkey sausage link, sliced (leaner than pork sausage, packed with protein)

Directions
- Prepare the Sausage and Sweet Potatoes: In a skillet over medium heat, add the oil. Add the turkey sausage slices and cook for 3-4 minutes, turning occasionally, until browned. Add the pre-roasted sweet potato cubes to the skillet and heat for another 2 minutes.
