Ingredients
2 large chicken breasts (about 8 oz each)
1 cup panko breadcrumbs
½ cup grated Parmesan cheese
1 large egg
1 cup marinara sauce
1 cup shredded part-skim mozzarella cheese
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
1 tbsp olive oil spray
Directions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil spray.
- In a shallow bowl, mix the panko breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Beat the egg in another shallow bowl. Dip each chicken breast into the egg, then coat it thoroughly in the breadcrumb mixture.
- Place the coated chicken breasts in the prepared baking dish. Lightly spray the tops with olive oil spray.
- Bake for 20 minutes.
- Remove the chicken from the oven. Spoon marinara sauce over each piece, then sprinkle shredded mozzarella cheese on top.
- Return the dish to the oven and bake for another 10 minutes or until the cheese is melted and bubbly and the chicken is fully cooked.
- Let the chicken rest for 5 minutes before serving.
