Ingredients
4 medium-sized potatoes (Yukon Gold or Russets, about 500g) – ideal for their starchy texture.
2 tbsp unsalted butter
2 tbsp vegetable oil
1/2 tsp salt
1/4 tsp black pepper
1 cup heavy cream
1/4 cup sour cream
1 clove garlic, minced
1 tbsp fresh parsley, finely chopped (substitute with dried parsley if needed).
1 tbsp fresh chives, chopped
1/2 tsp lemon juice – adds a subtle tang and freshness.
Salt and pepper to taste
Directions
- Peel the potatoes and grate them coarsely using a box grater. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
- Heat a large non-stick skillet over medium heat and melt 1 tbsp butter with 1 tbsp oil. Spread the grated potatoes evenly in the pan, pressing down gently to form a compact layer. Season with salt and pepper.
- Cook on medium heat for 8–10 minutes, or until the bottom is golden and crisp. Flip the Rösti using a large plate to keep it intact.
- Add the remaining butter and oil to the pan, then slide the Rösti back in. Cook the other side for another 8–10 minutes until golden and crispy.
- In a small saucepan, heat the heavy cream over low heat until warm (do not boil). Stir in the sour cream, garlic, parsley, chives, and lemon juice. Simmer gently for 2–3 minutes. Season with salt and pepper to taste.
- Slide the Rösti onto a serving plate and cut into wedges. Drizzle the herb cream sauce over the top or serve it on the side for dipping.
